"The Gourmet Beignets"
1x box of Big Beignets - Berliners, 150 pieces each,
approx. 80g heavy dough blank with a round shape for when you're really hungry (minimum order 10x boxes)
PREPARATION:
1) Thaw the Gourmet Beignets on fermentation trays at room temperature for approx. 10 minutes or place them in a preparation.
Then place in a fermentation cabinet at approx. 35 °C, rel. Humidity: 75%.
Just before ¾ proofing, allow to set well in rum temperature (skin formation)
# Alternatively –
Use with KIPPFIX fermentation carriers: Long-term fermentation for approx. 12 hours at approx. 10-12 °C
Then leave to stand for approx. 45-60 minutes at room temperature (20 °C) and then allow to set well #
Baking: Simmer for approx. 3 minutes on each side, +/- 30 seconds depending on desired browning.
Temperature of the boiling fat: 175 °C.
