1x box of Gourmet Beignets - Berliner dough blanks = 300 pieces, each
approx. 48/50 g blanks in a round shape. (minimum order is 10 boxes!)
Berliner dough blanks for thawing, proving and baking in boiling fat.
(The dough blanks can also be baked as soft brioche rolls after proving in the oven)
PREPARATION:
1) Thaw the Gourmet Beignets on proofing trays at room temperature for approx. 10 minutes or place them in a proofing cabinet
Then place in a proofing cabinet at approx. 35 °C, rel. Humidity: 75%.
Just before ¾ proofing, allow to set well at rum temperature (skin formation)
# Alternatively –
Use with KIPPFIX fermentation carriers: Long-term fermentation for approx. 12 hours at approx. 10-12 °C
Then leave to stand for approx. 45-60 minutes at room temperature (20 °C) and then allow to set well #
Baking: Simmer for approx. 3 minutes on each side, +/- 30 seconds depending on desired browning.
Temperature of the boiling fat: 175 °C.
