The closed system allows the dough's own moisture to be used for long-term proofing. (Red corners stacked on top of each other)
Stacked as an open system, the trough can be used in the warming room. (Red and white corners stacked on top of each other)
Easy to use: grease the trough, place the dough blanks on top, and leave to prove, whether stacked in the warming room as an open system or left at room temperature for long-term proofing as a closed system.
