36-Unit Flour-Free Proofing Tray 1x Proofing tray with a three-layer base for 36 doughnuts/dough blanks. Stackable for open and/or closed fermentation. Visible/recognizable by the different corner colors - red and white. The closed system allows the dough's natural moisture to be used for long-term fermentation. (Red corners on top of each other) Depending on the dough texture, the fermentation boxes can be moistened with a damp cloth (for drier doughs) or lightly sprayed with release wax (for moister doughs).

Place the dough blanks on the mesh and a predetermined surface and leave to prove as desired.

For long-term fermentation, use at room temperature as a closed system or in a warm room as an open system.
