The closed system allows the dough's own moisture to be used for long-term proofing.

Depending on the dough's properties, the proofing boxes can be moistened with a damp cloth (for dry doughs) or lightly sprayed with release wax (for moist doughs).

Simply place the dough pieces on the mesh and a designated area and leave to proof as desired.

For long-term proofing, stack at room temperature as a closed system or in the warming room as an open system.
